Cheeseburger Soup

When fall hits we think of Soup. Whether it be at our house, to take as a dish to pass or to my Uncle’s cabin during hunting camp. This recipe for Cheeseburger Soup is always a hit!
You will need these Ingredients:
1/2# ground beef
3/4cup chopped onion
3/4cup shredded carrots
3/4cup diced celery
1 tsp. dried basil
1 tsp. dried parsley flakes
4 tbsp. butter or margarine, divided
3cups chicken broth
4cups diced potatoes
1/4cup flour
8oz Velveeta Cheese (cut into cubes)
1/2 cup milk
3/4 tsp salt
1/4-1/2 tsp. pepper
1/4 cup sour cream
Directions:
Brown beef, drain and set aside. In the same pan saute onion, carrots, celery, basil and parsley in 1 tbsp. butter until veggies are tender, approximately 10 minutes. Add broth, potatoes, and beef. Bring to boil.
Reduce heat, cover, and simmer until potatoes are tender. Meanwhile, in a small skillet melt the remaining butter, add flour, cook, and stir until bubbly. Add to soup.
Bring to a boil, cook and stir for 2 minutes. Reduce heat to low, add cheese, milk, salt & pepper. Cook until cheese melts and stir. Remove from heat. Blend in sour cream. Enjoy!!
** If making for more than 4 people you may want to double this recipe, especially if you want leftovers. Also, we have found using a food processor speeds up the process in preparing this soup.
