Sweet Apple Chicken Sausage, Veggies with Brown Rice

al fresco’s sweet apple chicken and Minute Rice’s brown rice makes dinner easy
al fresco is definitely a chicken sausage I can always count on to help me make a tasty meal. ย With my kids, either living out of the house or my daughter being away at college easy and tasty are what I am looking for.
I loved using the al fresco chicken patties in my last recipe which you can find here. I have also made a recipe using al fresco chicken meatballs which you can find here.
For this recipe, I wanted to try their sweet apple chicken sausage with pure Vermont Maple Syrup. You will not believe it but it has small little pieces of apple in every bite. ย My husband picked out the asparagus and the crinkle cut carrots. ย We picked out the brown rice for something different from Minute Rice.
This recipe was easy to make and very filling. ย I wish I would have thought of it and wrapped it in a wheat or white flour tortilla. ย But I didn’t so we will try that next time and add a bit of cheese.
- 1 package of al fresco sweet apple chicken sausage links
- 1 small box of Minute Brown rice
- 1 bag of frozen asparagus (or fresh if it is in season for you)
- 1 bag of frozen crinkle carrots
- 1 tablespoon olive oil
- salt & pepper to taste
- Choose how much rice you would like ( I did 6 servings as we wanted left-overs)
- Prepare the rice according to the directions on the box.
- Put 1 tablespoon of olive oil in your pan and heat it up.
- Once warm add your frozen carrots and asparagus and cover.
- Stir occasionally until tender.
- Cut up sausage links and add to pan with vegetables.
- Cook for about 15 minutes on medium heat (or less if you like more crunchy carrots)
- Once your sausage and veggies are to the point you want then cover with brown rice.
- Stir until everything is mixed through.
- Enjoy
- Variations:
- Can put in a wheat tortilla, wheat pita pocket, top with some cheese of your liking.
