Poor Man’s Quesadillas by Becky

Ingredients:

Soft Tortilla Shells (1 shell = 1 quesadilla)
1 # Hamburger/Venison/Turkey Burger (your choice)
1-medium size onion
4-8 cups shredded cheese (Taco Blend, Chedder, Chedder Mix)
1 1/2 – 3 tbsp Margarine

Salsa, Sour Cream, Guacamole (whatever you want/like to dip them in)

Directions:
1. Cook onion in a pan with 1 tablespoon margarine until soft/and browned. Add burger and cook til crumbly. Salt & Pepper to taste. Set aside.
2. Heat another pan and put enough Margarine in to coat the bottom of the pan.
3. Lay your tortilla in the pan and sprinkle shredded cheese on one half, with a little of the hamburger mixture. Let the cheese start to melt.
4. Take the plain side and fold it onto the cheese/burger mixture side. Let it cook for a minute or so, once you feel it has melted, take a spatula and flip it and pat it down lightly.
5. I flip it a few more times until it is browned.
6. Once it is done I put it on a plate and using a pizza cutter I cut it into 3 pieces.
7. Usually I make 2-3 per person so if you have more than 1 pan-depending on the people it will go quicker.

Put on a plate with your salsa, sour cream & or guacamole and ENJOY!
